Wowee Maui Mustard

Ingredients:

  • 1 (8 oz.) can crushed pineapple, drained
  • ½ cup Jalapeno jelly
  • 3 tablespoon whole-grain mustard

Instructions:

  • Stir together all ingredients. 
  • Makes about 1 ½ cups. 
  • This is excellent as a dip for chicken nuggets or chicken strips.

NOTE: If you want some extra heat, add in your own additional diced or minced jalapeno pepper. 1 or 2 pepeprs oughta do ya.

Proud D. Foods - Jalapeno Jelly

We recently tried a new jalapeno jelly product from Proud D. Foods, and loved it so much we thought we'd include our formal "kudos" in the Jalapeno Madness newsletter. The jalapeno pepepr jelly is very sweet and tangy, yet provides enough of a mild kick to give spice lovers what they crave.

We tried the jelly with the above recipe and spread it over a burger. Very simple and something we've never tried before. We also spread it over baked salmon along with some additional minced jalapenos for added kick. Then we used it as a dip for fondue, but then the jar was empty. We'll have to order some more. Help! My Hands are Burning! A Helpful Jalapeno Handling Tip

I get this question all the time on the site, or some variation thereof. My jalapeno peppers have burned my tongue! or Help! My jalapeno peppers have burned my skin! How do you stop the burning after eating jalapeno peppers?

Because of the innate hotness of all chile peppers, they can burn not only the inside of your mouth, but your skin as well. If you find that you simply can't bear the heat after eating a chile pepper, try to consume a dairy product, like milk, yogurt, or ice cream. Dairy products contain a chemical called caisen that combats the effects of chile peppers' capsicum by stripping it from its receptor site on the skin. I've also tried sugar and that seems to work in a pinch.

Burning Skin

Try rubbing alcohol first to remove the burning oil. Then, soak the skin in milk or another dairy product. Only use water or saline for your eyes, however, and please remember that the best way to combat the chile pepper heat is to use rubber gloves when handling peppers.

Also, don't let the rubbing alcohol linger on your skin. It can cause additional irritation if you leave it on for too long.
