Jalapeno Glazed Turkey Breast

This kick-a-licious glaze adds the right amount of spice to what might otherwise become a bland turkey meal. Try it on chicken as well.

Ingredients:

  • 4 jalapeno peppers, minced
  • ¼ cup jalapeno pepper jelly
  • 1 4-pound turkey breast (bone in)
  • 1 cup chicken stock
  • 2 teaspoons cornstarch
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespoons minced garlic
  • ½ teaspoon ground cumin

Instructions:

  • Light grill and set to medium heat.
  • Place turkey breast skin side up on grill rack.
  • Cover and grill on medium 1 to 1-1/4 hours, or until meat thermometer indicated 170 degrees at turkey center. Meanwhile, prepare the glaze.
  • In a saucepan, add chicken stock and cornstarch. Heat to medium. Stir until thickened.
  • Add jalapeno pepper jelly, cilantro, garlic, cumin, and half of the minced jalapeno peppers. Stir until blended and thickened.
  • Brush glaze over the last 10 minutes of cooking. Repeat with 5 minutes left, or as often as you’d like.
  • Remove turkey from grill. Sprinkle with remaining minced jalapeno peppers and serve with extra glaze as a sauce.

Serves 6-8

Rob Stone vs. NMSU's Chile Peppers

I saw this hilarious video on YouTube where a reporter named Rob Stone foolishly samples the worlds hottest chile pepper. Jalapenos are hot enough, but can you imagine taking a bite straight out of something as hot as a habanero? Hilarity ensues at Rob's expense, the poor guy. But no worries. No one was hurt in the making of this clip...not seriously anyway.

Speaking of cool videos on YouTube, here's a link to another that you're sure to love. It's a Jalapeno Eating contest! As much as I love jalapeno peppers, I don't think I'd win against any of these guys. I'm notorious for being the world's slowest eater, but it sure would be fun to try!

A Burning Hands Tip from One of Our Readers

Last month we discussed ways to avoid or treat burning skin from making contact with pepper oils. One of our readers had a similar experience and had this information to share. I think you'll find it helpful as well.

"I was browsing thru your web page when i came across your solution for peppers burning the skin.

I was given some peppers and was cutting them up to freeze, when my hands started burning really bad and they were RED, I soaked them in water and the more they soaked the more they hurt, we ended up calling poision control, they told me to do the following: Wash hands with warm soapy water, to open pores, then rub with oil,vegetable or olive oil let set for a while then rinse.

Boy let me tell you about relief!! they were still red and a bit sore but it sure made a difference. So in case someone who dont have dairy products in the house like me, theres another solution.
