Chipotle-Tomato Sauce Recipe
If you are a fan of the smoky chipotle pepper, this chipotle infused tomato sauce will add a new dimension to your meal. We thickened it up a bit with a roux, added pureed cooked vegetables, cooked chorizo and more, and let it simmer to allow the flavors to develop. It took on a stew-like quality, nice and thick.
Oso Pepper Company Enters the Market
A new hot sauce maker has entered the market, and I’m happy to help spread the word. Vincent Verret of Oso Pepper Company, LLC, sent along some of his sauces and they are quite delicious. I have personally tried the “Cry Out Chili Sauce”, which is a spicy and flavorful blend of habanero, serrano, jalapeno, chili de arbol, cherry pepper, and tamari; “Cry Out Surf Sauce”, a spicy and sweet hot sauce made with mango, pineapple and habanero peppers; and the “Cry Out Italian Pesto”, which has a mild spice level but pleasant herb flavor.

Chili Pepper Sauces for National Sauce Month
March is “National Sauce Month” and that is newsworthy at Chili Pepper Madness. We’re sure you’ve heard such phrases as “The Sauce is the Boss” and “The Secret is in the Sauce”. A great sauce can turn a simple, average meal into a stunning palate pleaser, something you are unlikely to forget. Chili peppers are ideal for numerous types of sauces. They play nice with other ingredients, bring both astonishing flavor and heat range, and stand alone perfectly well on their own.
An Interview with Hot Sauce Maker Bob Henry of Henry Family Farm
We recently spoke with David Rosengarten about his line of hot sauces – three limited edition varietal chile extracts from Henry Family Farm, in Virginia. David is a pioneering food and wine critic, cookbook author and culinary explorer. Bob Henry of Henry Family Farm agreed to answer some questions about the hot sauce business.
