Interesting Jalapenos in the News Ten Rules for Making Nachos We found this over at the HuffingtonPost.com. Some good advice on making nachos. We can't say we agree with saving the chorizo for another meal, though. We sometimes like a double dose of chorizo served over the top of our nachos. Not every time, but often! Jalapeno Thick Burger Commercial OK, this commercial is sort of funny. We think the jalapeno pepper has the perfect amount of spiciness, but for some firemen, like the gent in the commercial, found the jalapeno slice just a BIT too hot for him. It's worth a view. Beef Chuck Chili With Pinto Beans and Jalapeno Pepper In honor of our Chilli Recipe month, we found this chilli recipe posted over at the Vancouver Sun. Stuffed Jalapeno Recipe This recipe was posted over at Fox 8 - Hey, they look a lot like OUR stuffed jalapeno pepper recipes. Still, anyone who posts recipes for stuffed jalapenos is OK in our book. Layered Mexican Dip Another delicious recipe posted over at Freep.com. It sounded quite delicious to us, so we had to post it for you! Birth of a Jalapeno This is just the cutest little photo ever! Theme Month at MyKitchenMadness.com We're trying something new at the Madness series of web sites - theme months! Each month we'll focus on recipes and information related to a specific theme, centered around each web site theme as well, of course. February Theme: Chilli Recipes! Chilli! It's the perfect, quintesentially American meal made so many different ways, yet no matter how you make it, you know you're eating a nice bowl of chilli. We're dedicating February to exploring Chilli recipes through our other web sites (JalapenoMadness.com, ChiliPepperMadness.com, Seafoodmadness.com) and we're going to have fun with it! We also LOVE the fact that people love to argue about how to spell Chilli, meaning the American-made meal in a bowl with (or without) beans. You basically will not find a definitive answer, except for some pretty darned strong opinions, but we've opted to use "chilli" (with 2 L's) for the meal you serve in a bowl. Why? Well, you see -- chile is the Spanish term for the fruit and the plant, but chili (note the 1 L) is the American version of chile. This leaves us with "chilli", and not "chilly", which means you're cold! Any questions? We'll be posting information our mother site, www.MyKitchenMadness.com as well. |

Mike's Roasted Jalapeno Pepper Chuck Chilli This is a beanless chilli with meaty Black Angus Chuck roast that will surely satisfy the biggest appetite. We roasted our jalapeno peppers before adding them to the mix for that sweet and succulent flavor you won’t get with unroasted chilies, though I’m sure it would be delicious unroasted, too. For additional flavor, we added red wine, and you’ll notice the effect. As a variation, try beer instead of wine and see how you like the difference.
Pistachio-Jalapeno Pepper Sauce This is an Argentinian sauce and quite delicious. We like to spice ours up with some jalapeno peppers for extra flavor and spicy heat! This recipe was from low-calorie January, but we hope you like it now in February, even though it's Chilli Recipe Month!
