Time to Start Your Seedlings - Think Spring!

Timing will fluctuate based on where you are located in the world. We at Jalapeno Madness are in Zone 5 in the US, and we are prepping for Spring. If you haven’t bought your seeds already, be sure to get them soon so that you are ready to start according to the timing for those particular seeds. Typically for jalapenos, you’ll start the seeds inside 8-12 weeks prior to transferring them outside. Jalapenos like warm weather so you don’t want to transplant them in the ground until 2-3 weeks after the last frost when the soil temperature is about 60 degrees. For us this is typically early June.

Don’t fret if you don’t get started early enough. You can always buy seedlings at your local nursery after the last frost and plant them directly into the ground.

Egg Salad with Avocado and Jalapeno Peppers

We've created jalapeno and avocado omelets, which were quite delicious, so we thought we'd try the combination as an egg salad sandwich instead and see how it came out. Guess what? It's quite declicious as well! This recipe makes for a perfect lunch, and it's quick and easy to make. Not only that, it's rather affordable; a nice cheap lunch in this crazy economy. This one fits nicely into our spicy mustard theme month.

Jalapeno Miss recently stopped at the Mustard Museum in Madison, Wisconsin and couldn't help herself. She came home with a boat load of spicy mustard jars! So, we've decided to focus some of our recipes this month on spicy mustard. We aren't huge fans of your typical yellow mustard, but give us a good spicy jalapeno or habanero mustard any day!
