Dehydrate Your Chili Peppers – Time to Preserve
It is nearing the end of the gardening season for many people, and you may have an overabundance of chili peppers this year. It can be difficult to cook all of those peppers into recipes, so now is a good time to think about preserving. One of my favorite ways to preserve chili peppers is by dehydrating them.
Sweet Pepper Relish with the Venezuelan Tiger
Yesterday was warm and mild, begging for a cookout. We kicked off early. I ran out to the local butcher and picked up a variety of brats. I snatched up a potato half the size of a football for a twice-baked side dish. Nothing fancy, just good old fashioned grilling. But when I arrived home, I found a special delivery in my mailbox – Venezuelan Tiger Peppers.

Tshololo Chili Pepper – with a Hot Sauce Recipe
We grew a variety of chili peppers in our garden this year, like every year, and were happy with a newcomer – the Tshololo chili pepper. There isn’t much information on this wonderful little pepper. It originates in Brazil and it is fairly rare. It is Capsicum Chinense. Having grown them this year, I can tell you that they are roughly 4-5 inches in length and curl up like a cayenne pepper, though the pepper flesh is a bit thicker than the cayenne.
