Ingredients
- 6 small potatoes
- 6 large eggs
- 1.5 cup shredded cheddar cheese
- 4 ounces cooked chorizo
- 4 purple jalapeno peppers, chopped
- 10 large fresh basil leaves, chopped
- 1 teaspoon chili powder of choice
- Salt to taste
- Corn torillas for serving
- Various Toppings for serving
- Hot Sauce of choice
Cooking Directions
- Boil the potatoes about 12 minutes or until softened. Alternatively, you can bake the potatoes at 350 about 15-20 minutes, or even microwave them to soft doneness.
- Preheat oven to 350 degrees.
- Mash the potatoes into a lightly oiled 6x8 baking dish.
- In a mixing bowl, add eggs and beat.
- Add cooked chorizo, 1 cup cheddar cheese, chopped peppers and basil, and chili powder. Mix well.
- Salt to taste then pour over mashed potatoes.
- Top with remaining cheddar cheese and bake about 20-25 minutes.
- Heat corn tortillas and set aside.
- Slice small portions of the frittata and set onto corn tortillas.
- Top with your choice of flavors - we added sliced kiwi and avocado, but anything goes for your breakfast tacos.
- Top with hot sauce of choice and serve!
NOTE: Some great toppings might include fresh cilantro, diced onion, fresh chili peppers and more.
