Crepes with Jalapeno Jelly
A delicious breakfast! Jalapeno Miss loves our new crepe pan because it means I have to create lots of fun recipes with crepes and serve them to her in bed.
Ingredients
- 2/3 cup crepe mix
- 2/3 cup water
- 2 eggs, beaten
- 1 teaspoon butter
- 6-8 tablespoons jalapeno jelly
Cooking Directions
- Heat your crepe pan to medium heat.
- In a mixing bowl, combine crepe mix, water and eggs. Mix well.
- Add butter to crepe pan and melt.
- Add about 1/3 cup of crepe mixture to crepe pan and cook about 45 seconds, or until bottom browns. Flip and cook another 15 seconds. Transfer a plate and cook up the rest – should make 6 crepes.
- To each crepe, add 1 tablespoon jalapeno jelly and roll the crepe up.
- If preferred, pour extra jalapeno jelly over crepes and serve!
