Goat Cheese Guacamole Burgers with Roasted Jalapeno Peppers
Ingredients
- 1 pound ground chuck (80/20 mixture)
- 1 avocado, pitted and peeled
- 2 ounces goat cheese
- 2 tablespoons chopped cilantro
- 1 teaspoon lime juice
- 2 roasted jalapeno peppers, sliced
- 2 brioche buns
- 2 tablespoons butter
- Salt and pepper to taste
- 3 tablespoons beer (or cooking wine, or broth)
Cooking Directions
- For the guacamole – Mix together the avocado, goat cheese, cilantro and lime juice together in a mixing bowl. Mash it all up with a fork until it is nice and creamy. I used my molcajete. I love that thing.
- Season with salt to taste and set aside until ready to use.
- Form the ground chuck into 2 burger patties, about 1 inch thick each.
- Heat a large pan to high heat.
- Season the outsides of the burgers with salt and pepper.
- Set the burgers directly into the pan and cook 3-5 minutes.
- Flip and cook 1 minute, then pour the beer (or wine or broth) into the pan. Allow to steam up around the burger. Cook about 3 more minutes or until done to your liking.
- While burgers are cooking, heat another pan to medium-high heat.
- Butter the buns and sear the butter side down to get them nice and toasted.
- Serve the burgers on the buns, topped with heaping spoonfuls of guacamole and topped with roasted jalapeno pepper slices.
