Mike's Renegade Jalapeno Banana Muffins with Cream Cheese Frosting

My neighbor stopped by and gave me 3 bunches of bananas that were on their way to going bad, saying the store was just trying to get rid of them. I figured, what better way to use ripe bananas than jalapeno banana bread? The results were delicious. We had jalapeno banana bread for lunch.

Mike's Renegade Jalapeno Banana Muffins with Cream Cheese Frosting

Ingredients

  • 2 jalapeno peppers, diced
  • 4 ripe bananas, peeled
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 4 eggs, beaten
  • 1 ½ cups sugar
  • ½ cup extra virgin olive oil
  • 2 cups cream cheese frosting

Cooking Directions

  1. Preheat oven to 350 degrees
  2. Stir together flour, baking powder, baking soda and salt.
  3. In a separate bowl, combine eggs, banana, jalapeno peppers, sugar and oil. Mix well.
  4. Add in dry ingredients and mix well.
  5. Transfer to muffin tins and bake 12-15 minutes, or until muffins are thoroughly baked (slightly moist in the center, not wet).
  6. Cool and frost! Serve!
