Jalapeno-Beer-Cheese Dip

Beer! Cheese! And jalapeno peppers! Yes! This is a lot of exclamation points. Sorry, but we're just a bit excited about this gooey, cheese dip that is great for any party, but also can do double duty as your next nacho cheese sauce. Bring on the chips!

Jalapeno-Beer-Cheese Dip Recipe

Jalapeno-Beer-Cheese Dip

Ingredients

  • 1 teaspoon olive oil
  • 1 small red jalapeno, chopped
  • 1 small green jalapeno, chopped
  • 2 gloves garlic, minced
  • ½ stick butter
  • 1 tablespoons flour
  • 1 cup beer
  • 3 ounces cream cheese
  • 4 ounces white cheddar, shredded

Cooking Directions

  1. Heat a saucepan to medium heat and add chopped jalapeno peppers with olive oil.
  2. Cook about 5 minutes to soften.
  3. Add garlic and cook 1 more minute until garlic is nice and fragrant.
  4. Add butter and allow melt.
  5. Add flour and stir to form a roux. Cook about 5 minutes or so until the roux becomes a nutty brown.
  6. Pour in beer and stir. Reduce heat to medium-low and continue to stir.
  7. Add in cream cheese and stir to incorporate.
  8. Add in white cheddar a bit at a time, stirring the entire time, so that the cheese incorporates and becomes creamy.
  9. Remove from heat and serve!
