Spicy Eggs in Hats (with Jalapeno Peppers)

Spicy Eggs in Hats (with Jalapeno Peppers)

A quick and easy breakfast recipe, pretty low calorie for you if you use a lighter bread and go easy on the butter. Just use butter spray for this and double the jalapenos for a satisfying meal.

Ingredients

  • 2 jalapeno peppers, sliced into rings
  • 4 eggs
  • 4 slices of bread
  • spray butter
  • spray oil
  • salt and pepper to taste

Cooking Directions

  1. Heat a sautee pan to medium and lightly coat with oil.
  2. Cut rings into each slice of bread (using a small glass top works great)
  3. Spray one side of each piece of bread (bread circles included) with spray butter.
  4. Add bread with holes to the sautee pan, then crack one egg into each hole. Add bread circles to the pan as well to cook.
  5. Fry about 2-3 minutes each, until the egg is done to your liking. You can flip it once if needed and cook about 1 minute.
  6. Add salt and pepper to taste.
  7. Transfer to plates and top with bread circles (your hats) and sliced jalapeno peppers.
  8. Enjoy!
