Jalapeno Popper Quiche

Here's a fun jalapeno poppers recipe that works great for breakfast or brunch. It's a wonderfully spicy quiche recipe with a jalapeno poppers twist.

Ingredients

  • 11-inch prebaked quiche crust
  • 4 ounces cream cheese, softened
  • 4 jalapeño peppers, chopped
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 5 large eggs
  • 1 teaspoon chili powder (Cayenne or Paprika work great)
  • 2 slices of bacon, cooked and coarsely chopped
  • 1/2 cup Mexican style cheese, shredded
  • Salt and pepper to taste

Cooking Directions

  • Preheat oven to 350 degrees.
  • Spread cream cheese over crust bottom and add jalapeño peppers on top.
  • Heat a saucepan to medium heat. Add milk and cream. Bring to a simmer and reduce heat to low.
  • To a large mixing bowl, add eggs and beat well. Add milk and cream and whisk thoroughly.
  • Add chili powder and half the bacon. Season with salt and pepper to taste. Stir.
  • Pour egg mixture into pie crust and bake 30 minutes.
  • Remove from heat, top with cheese and remaining bacon.
  • Bake about 12 minutes, or until cheese is nicely melted.
  • Remove from heat and cool slightly before serving.
