Jalapeno Popper Quiche
Here's a fun jalapeno poppers recipe that works great for breakfast or brunch. It's a wonderfully spicy quiche recipe with a jalapeno poppers twist.
Ingredients
- 11-inch prebaked quiche crust
- 4 ounces cream cheese, softened
- 4 jalapeño peppers, chopped
- 1/2 cup milk
- 1/2 cup heavy cream
- 5 large eggs
- 1 teaspoon chili powder (Cayenne or Paprika work great)
- 2 slices of bacon, cooked and coarsely chopped
- 1/2 cup Mexican style cheese, shredded
- Salt and pepper to taste
Cooking Directions
- Preheat oven to 350 degrees.
- Spread cream cheese over crust bottom and add jalapeño peppers on top.
- Heat a saucepan to medium heat. Add milk and cream. Bring to a simmer and reduce heat to low.
- To a large mixing bowl, add eggs and beat well. Add milk and cream and whisk thoroughly.
- Add chili powder and half the bacon. Season with salt and pepper to taste. Stir.
- Pour egg mixture into pie crust and bake 30 minutes.
- Remove from heat, top with cheese and remaining bacon.
- Bake about 12 minutes, or until cheese is nicely melted.
- Remove from heat and cool slightly before serving.
