Juevos Rancheros
Mexican recipe, also very low calorie! As we gear up for our low-calorie January, we whipped up a healthy version of a classic Mexican dish, Juevos Rancheros. Very delicious and very health conscious. And very easy to make!
Ingredients
- 4 large eggs (70 calories each)
- 4 small corn tortillas (50 calories each)
- 8 ounces vegetarian refried beans, heated (65 calories for 2 ounces)
- 4 ounces reduced fat Mexican cheese (30 calories per ounce)
- Jalapeno pepper slices (4 calories per jalapeno)
- Hot sauce to taste (zero calories! Yay!)
Cooking Directions
- Heat a small frying pan to high heat and warm your tortillas, about 1 minute each side. Transfer to 2 plates.
- Spoon 2 ounces of vegetarian refried beans over each tortilla.
- In the frying pan, fry up the eggs. You can do this one at a time, as the eggs fry quickly, about 1 minute or so. Be sure the egg whites cook through thoroughly, and you may need to use a bit of no calorie oil spray.
- Top the beans with 1 fried egg each.
- Sprinkle each with 1 ounce reduced fat Mexican cheese, hot sauce to taste and jalapeno slices.
- Serve!
Total Calories for 2 filled tortillas: 430 calories.
