Mini Muffin Frittatas with Jalapeno Peppers
We love frittatas for breakfast or brunch. With this version, we baked them in muffin tins, which make for great individual sized portions. Serve them over avocado slices and you've got a wonderful meal.
Ingredients
- 12 eggs, beaten
- 10 ounces Mexican style cheese
- 6 ounces cooked chorizo
- 5 jalapeno peppers, chopped
- Sliced avocado to serve
- Spray oil
Cooking Directions
- Preheat oven to 350 degrees.
- Lightly oil 12 muffin or cupcakes pans.
- In a mixing bowl, combine eggs, cheese, chorizo and jalapeno peppers.
- Pour into muffin tins and bake 15 minutes.
- Serve over sliced avocado.
