Pepperoni Pizza Omelet with Jalapeno Peppers
Bring the fun of Sunday night pizzas to your breakfast table! If you love pizza, this breakfast recipe with spicy jalapeno peppers, pepperoni slices, tomatoes and mozzarella cheese will hit the spot. Start off the day the right way.
Ingredients
- 1 jalapeno pepper, diced
- 2 large eggs, scrambled
- 6 slices pepperoni, quartered
- 1/2 small Roma tomato, chopped
- 1/4 cup Mozzarella cheese, shredded
- 1 teaspoon butter
- Salt and pepper to taste
Cooking Directions
- Heat a large pan to medium heat.
- Add butter and melt.
- Add pepperoni slices and cook 1 minute.
- Add jalapeno peppers and cook 1 more minute.
- Add scrambled eggs and tilt pan to spread. Cook about 1 minute, or until eggs begin to set.
- Add cheese, tomato, and salt and pepper.
- Fold eggs around ingredients and flip. Cook about 1 minute, or until cheese is nice and melted.
- Serve!
