Roasted Jalapeno Peppers, Potatoes and Avocado
This recipe is the result of a bit of experimentation. We've never combined avocados with potatoes, but were curious how they would work together. Paired with roasted jalapeno peppers and other seasonings, the result was surprisingly good. It made for an excellent side dish. We also served some broiled salmon over it, so it works as a bed for proteins as well.
