Sausage-Ricotta Potato Mash
We recently made a double batch of our Sausage-Ricotta Jalapeno Poppers recipe, but wound up with too much of our stuffing mixture. Never wanting to waste food, we experimented with the leftovers and created a tasty potato mash side dish. We'll have to bring this one into the regular rotation.
Sausage-Ricotta Potato Mash
Ingredients
- 2-3 medium sized white potatoes
- 1 jalapeno pepper, diced
- 2 ounces ricotta cheese
- 2 ounces Italian sausage
- 1/4 small yellow onion, finely chopped
- 2 ounces grated Parmesan cheese
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Cooking Directions
- Heat a frying pan to medium heat and cook sausage thoroughly, about 7-8 minutes. Break apart and transfer to a mixing bowl. Allow to cool.
- To mixing bowl, add jalapeno pepper, ricotta cheese, Parmesan cheese, onion, chili powder and salt and pepper. Mix well.
- Stuff each jalapeno pepper with the sausage-cheese mixture.
- Microwave your potatoes on the potato setting, about 10 minutes or so, until potatoes are soft enough to pierce through with a fork and soft in the middle.
- Transfer to mixing bowl and mash with a fork until combined with other ingredients.
- Serve!
