Pressure Cooker Split Pea Soup with Jalapeno Peppers
With a pressure cooker, split pea soup cooking time is reduced to under an hour, including prep time. Talk about fast! And spicy.
Ingredients
- 1 pound dry green split peas
- 1 teaspoon olive oil
- 2 large carrots, peeled and chopped
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 2 jalapeno peppers, chopped
- 1 tablespoon chili powder (I enjoy habanero powder, but milder pepper powders are great)
- 6 cups chicken broth
- 2 bay leaves
- 8 ounces smoked ham, chopped (include the bone if you have it)
Salt and pepper to taste.
Cooking Directions
- Heat your pressure cooker to medium heat and add oil with carrots, onions, garlic and peppers. Cook about 5 minutes, or until the contents have softened.
- Add remaining ingredients and cover. Lock the lid. Bring to the proper pressure.
- Pressure cook on low for 20-25 minutes. Turn off the pressure cooker and
- release steam. Remove cover.
Stir the contents of the pot. Add salt and pepper to taste.
- Serve!
