Spicy Crock Pot Chicken

What began as an experiment in slow cooking chicken has turned into a very flavorful dish. Instead of slow cooking in chicken stock or beer (which is great, too!), we tried a mixture of jalapeno pickling juice and apple juice with loads of spicy seasonings. We loved the result.

Ingredients

  • 1 whole chicken, rinsed and patted dry
  • 1 cup apple cider
  • ½ jar pickled jalapeno peppers, juices included
  • 3 heaping tablespoons Italian seasoning
  • 2 tablespoons chili powder
  • 2 tablespoons dried parsley flakes
  • 1 tablespoon minced garlic

Cooking Directions

  • Drop all ingredients into the slow cooker and stir it up around the chicken. If you’d like, you can season the chicken inside and out with your seasonings, but it really isn’t necessary with this dish. Just drop it all in.
  • Slow cook at medium level about 3 hours. You can leave it in longer for more tenderness, but you might need to reduce the heat levels.
  • Carve your chicken and serve!

NOTE: You can pour some of the juices over your carved chicken to make it that much juicier, or whisk it with a bit of cornstarch and milk mixture to form a gravy.
