Spicy Grilled Flank Steak with Chimichurri Sauce Recipe
Ingredients
- 1 flank steak or skirt steak, about 1.5 pounds
- FOR THE FLANK STEAK MARINADE
- 1 cup soy sauce
- Dash of Worcestershire
- Juice from 2 limes
- 1 cup red wine vinegar
- Splash of red wine
- 5 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon Cracked black pepper
- Water as needed
- Chimichurri sauce to serve (see below)
Cooking Directions
- Lightly score the steak on each side against the grain.
- In a large mixing bowl, combine soy sauce, Worcestershire, lime juice. Vinegar, wine, garlic and olive oil. Mix well.
- Set the steak into a wide, flat dish and cover with the marinade. Add enough water to ensure entire steak is submerged.
- Top with cracked black pepper.
- Marinate at least 2 hours. I marinated ours for about 5 hours.
- Heat a grill to medium heat. Grill the steak 4-6 minutes per side, depending on your desired doneness. I did 5 minutes each side and it was perfect.
- Remove from heat and rest it for 5 minutes.
- Slice and serve with chimichurri and grilled jalapeno peppers.
For the Chimichurri Sauce
Ingredients
- 1 cup chopped parsley
- 1/2 cup chopped cilantro
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- Juice from 1 lime
- 2 cloves garlic, chopped
- Salt and pepper to taste
Cooking Directions
- This is so difficult - are you ready? Add all ingredients to a food processor or blender and blend until combined. Add a bit more oil if you'd like. Salt and pepper and serve!
