Spinach with Roasted Pecans and Jalapeno Peppers
This recipe is a great way to spice up your spinach. Spinach is usually fun, but can become a bit boring when served by itself. Incorporating just a few additionals can go a long way in taking a meal from ho-hum to wow!

Ingredients
- 1-2 jalapeno peppers, chopped
- 6 ounces baby spinach leaves, rinsed
- 2 ounces raw pecans, coarsely chopped
- 1 teaspoon minced garlic
- 1 teaspoon olive oil
Cooking Directions
- Heat a large saute pan to medium heat.
- Add olive oil and pecans. Pan roast about 2 minutes, stirring frequently.
- Add jalapeno peppers and garlic, and cook an additional 2 minutes.
- Add spinach leaves and cook until spinach reduces, about 2 minutes.
- Remove from heat and serve!
