Spinach with Roasted Pecans and Jalapeno Peppers

This recipe is a great way to spice up your spinach. Spinach is usually fun, but can become a bit boring when served by itself. Incorporating just a few additionals can go a long way in taking a meal from ho-hum to wow!

Spinach with Roasted Pecans and Jalapeno Peppers

Ingredients

  • 1-2 jalapeno peppers, chopped
  • 6 ounces baby spinach leaves, rinsed
  • 2 ounces raw pecans, coarsely chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon olive oil

Cooking Directions

  1. Heat a large saute pan to medium heat.
  2. Add olive oil and pecans. Pan roast about 2 minutes, stirring frequently.
  3. Add jalapeno peppers and garlic, and cook an additional 2 minutes.
  4. Add spinach leaves and cook until spinach reduces, about 2 minutes.
  5. Remove from heat and serve!
