Sweet and Spicy Salmon with Jalapenos
In need of a quick and easy lunch recipe? You can't go wrong with grilled salmon. We do our best to incorporate as much seafood into our diets as possible, especially our favorite fish staple, salmon. With just a few simple ingredients you probably always have on hand, you can whip this one up in no time. And it's quite healthy, too.
Ingredients
- 2 6-ounce salmon fillets
- 3 jalapeno peppers, diced
- 2 tablespoons pineapple jam
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Spray oil
Cooking Directions
- Preheat grill to medium heat.
- Set salmon fillets onto a sheet of tinfoil and season with garlic powder, salt and pepper.
- Grill about 4 minutes per side, or until salmon is cooked throughout and no longer pink in the center.
- Spoon 1 tablespoon pineapple jam over salmon, then top with sliced jalapeno peppers.
- Serve!
