Mike's Taco-Style Roasted Corn
Summertime perfection! So golden! We LOVE corn in on the grill in the summer, and this variation is both fun and delicious to try. Imagine, golden sweet corn seasoned with diced jalapeno peppers, butter, and your favorite taco seasonings, then roasted over the grill fire. We want more.
Ingredients
- 2 ears corn, shucked
- 2 teaspoons taco seasoning
- 2 small jalapeno peppers, diced
- 2 tablespoons butter
Cooking Directions
- Preheat grill to medium heat.
- Set each ear of corn onto a sheet of tinfoil.
- Sprinkle each with taco seasoning. Add to each a tablespoon of butter and one diced jalapeno.
- Completely wrap in tinfoil and grill over indirect flame until corn is golden.
- Serve.
