Tangy Italian Salsa with Jalapeno Peppers

Tangy Italian Salsa with Jalapeno Peppers

Here's a simple salsa recipe with jalapeno peppers that works perfectly as a serving bed for shellfish, like scallops or shrimp. We recently served this recipe with Proscuitto Wrapped Scallops. Delicious!

Ingredients

  • 6 cayenne peppers
  • 2 large jalapeno peppers, chopped
  • 3 large Roma tomatoes, chopped
  • 2 teaspoons fresh scallions
  • 4 ounces chunky pineapple
  • 4 tablespoons Italian dressing

Directions

  1. Add all ingredients to a food processor or blender
  2. Mix and pulse 3 or 4 times until salsa is still nice and chunky
  3. Refrigerate 1-2 hours and serve
