Tangy Italian Salsa with Jalapeno Peppers
Here's a simple salsa recipe with jalapeno peppers that works perfectly as a serving bed for shellfish, like scallops or shrimp. We recently served this recipe with Proscuitto Wrapped Scallops. Delicious!
Ingredients
- 6 cayenne peppers
- 2 large jalapeno peppers, chopped
- 3 large Roma tomatoes, chopped
- 2 teaspoons fresh scallions
- 4 ounces chunky pineapple
- 4 tablespoons Italian dressing
Directions
- Add all ingredients to a food processor or blender
- Mix and pulse 3 or 4 times until salsa is still nice and chunky
- Refrigerate 1-2 hours and serve
