Turkey Meatballs in Chipotle Yogurt Sauce
Ingredients
- 12 ounces ground turkey
- 1 jalapeno pepper, chopped
- ½ small onion, chopped
- 4 cloves garlic, chopped
- 1 tablespoon chopped cilantro
- ½ teaspoon ground cumin
- 1 teaspoon chili powder
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons milk
- 2 tablespoons panko
- For the Chipotle Yogurt Sauce
- 1 cup Greek yogurt
- 2 chipotles in adobo sauce
- Juice from 1 lime + some of the zest
- 1 tablespoon olive oil + more as needed
- Salt and pepper to taste
Cooking Directions
- For the Meatballs - Preheat oven to 400 degrees.
- Heat a pan to medium heat and add a bit of olive oil. Add onion and jalapeno. Cook about 5 minutes to soften.
- Add garlic and cook 1 minute. Remove from heat and cool. Add to a mixing bowl.
- To the mixing bowl, add ground turkey, cilantro, cumin, chili powder, Parmesan cheese, milk and panko.
- Salt and pepper to taste. Hand mix, but do not overmix or they will become mushy.
- Form the turkey mixture into 12 equal sized meatballs – 1 ounce each.
- Set onto a baking sheet and lightly brush with olive oil.
- Bake about 10 minutes, or until turkey is cooked through.
- For the sauce, combine yogurt, chipotle, lime juice and olive oil. Add to a food processor and process until smooth.
- Add lime zest and salt and pepper to taste. Mix well.
- Serve yogurt sauce into flat serving dishes and add in 3 to 4 meatballs.
- Top with extra cilantro and lime zest as desired.
- Serve!
