Sauteed Jalapeno Cabbage Slaw
This is an outstanding vegetarian side dish to accompany your lunches or dinners, or even set up for parties. It is very easy and inexpensive to make, but be warned! The more jalapeno peppers you add, the hotter this dish will be. Perhaps that seems obvious, but the sautee-ing helps to bring out some of the heat.
Ingredients
- 2 jalapeno peppers, chopped
- 1/4 head of cabbage, chopped
- 1 Spanish onion, diced
- 1 carrot, diced
- olive oil for sauteeing
- Chili powder to taste
Cooking Directions
- Heat a sautee pan over medium heat.
- Add oil.
- Sautee all vegetables about 15-20 minutes, or until they soften.
- Sprinkle with chili powder and serve!
NOTE: Be sure to stir often as the cabbage will blacken. Scrape the blackened bits off the bottom of the pan and mix into the veggies for flavoring.
