Jalapeno Cobb Salad Recipe
My wife and I decided we'd been eating too much pizza topped with jalapeno peppers, so we decided to eat a bit healthier tonight. She challenged me with the task of creating a healthy salad that was also delicious, so this was my answer. It turned out delicious!
This recipe makes 2 salad bowls.
Ingredients

2 jalapeno peppers, diced

1 bag of mixed lettuce greens

1 can pre-cooked chicken breast

1 avocado, peeled and diced

3 hard boiled eggs, chopped

2 tomatoes, diced
-
1 cup crumbled feta cheese
-
habanero flakes to taste

1/2 cup of your favorite dressing (low fat for this one!)
Directions

In a salad bowl, add 1/2 the bag of salad greens.

Starting from the center, arrange your ingredients in neat rows. See the photo below. From left to right, I have chicken, avocado, jalapeno peppers, diced tomato, hard boiled egg, and feta cheese.

If you'd like, you can heat the chicken ahead of time to have warm chicken, but cold is fine.

Top with habanero flakes for extra kick!

Serve with dressing on the side.

You can serve with traditional bacon, but that will add in extra calories. If you're trying to avoid that, skip the bacon.
