Spicy Shish Kebobs

    Ingredients

  • 2 boneless skinless chicken breasts
  • 1 zuchini
  • 4 cherry tomatos
  • 1 yellow sweet pepper
  • 4 whole jalapeño peppers
  • jerk seasoning (can be found at most stores under Carribean)

Directions

  1. Wash chicken and vegetables.
  2. Slice zuchini in 1/4 inch square pieces.
  3. Cut chicken in 1 inch cubes.
  4. Alternate chicken with vegetables.
  5. Put jalapeños in middle.
  6. Marinade in 1 tbsp jerk seasoning and 1/4 cup ranch dressing for 1 hour.
  7. Grill for 15 minutes and serve with rice or salad. Dish can be made vegetarian or with beef. Thanks Kelly!
