Roasted Jalapeno Shrimp Scampi
Good stuff! Not too spicy but filled with the flavor of buttery goodness infused with roasted jalapeno peppers. We used angel hair pasta with our meal!
Ingredients
- 2 jalapeno peppers, roasted and diced - learn how to roast jalapeno peppers
- 1 pound prawns
- 3 tablespoons butter
- 2 tablespoons olive oil
- ½ cup white wine
- 1 teaspoon red pepper flakes
- 1 teaspoon chili powder
- 1 teaspoon minced garlic
- 1 tablespoon fresh parsley
- Pasta to serve
Cooking Directions
- Heat a sauté pan to high heat and add butter and olive oil.
- Let butter melt and bubble.
- Reduce heat to medium and add garlic and diced jalapeno peppers. Heat about 2 minutes until garlic begins to brown.
- Add shrimp, white wine, red pepper and chili powder. Raise heat to medium-high and bring liquid to a boil. Cook about 3 minutes.
- Flip shrimp and cook another 1-2 minutes, or until shrimp is cooked thoroughly through.
- Remove from heat and toss with pasta and fresh parsley!
